How to Make Peeps Cupcakes

Bake at 350°F for 18–22 minutes until a toothpick inserted in the center comes out clean. Let cool completely before frosting — and I mean completely. Warm cupcakes will melt your frosting into a sad puddle.

Step 2: Make the Green Buttercream Frosting

Beat the softened butter on medium-high speed for 3–4 minutes until pale and fluffy. This step is important — properly whipped butter is the foundation of great buttercream.

Add the powdered sugar one cup at a time, mixing on low speed to avoid a sugar cloud. Add the vanilla extract and a tablespoon of heavy cream. Beat on high for 2 minutes until the frosting is light and fluffy.

Step 3: Frost and Decorate

Transfer the green frosting to a piping bag fitted with a grass tip or a large star tip. Pipe a generous swirl onto each cooled cupcake.

Cool completely before frosting. I know I already said this, but it bears repeating. Even slightly warm cupcakes will cause your frosting to slide right off.

Ingredients

For the cupcakes:

  • 1 cup sugar
  • 1 cup all-purpose flour

Instructions

For the cupcakes:

  • Preheat the oven to 350°F. Line two standard muffin tins with cupcake liners and set aside.
  • In the bowl of a stand mixer, combine the sugar, flour, cocoa powder, baking powder, baking soda, and salt. Whisk to combine.
  • Add in the vanilla, eggs, milk, and oil. Mix on low until combined, scraping down the sides of the bowl often.
  • Using a measuring cup or ice cream scoop, divide the batter evenly into the prepared cupcake tins, filling each about ⅔ full.
  • Bake in the preheated oven for 14–16 minutes, or until the center is set and a toothpick inserted comes out clean. Allow to cool completely on a wire rack before decorating.

For the frosting:

  • In the bowl of a stand mixer, combine the softened butter and about half of the powdered sugar.
  • Mix on low until combined, scraping down the sides of the bowl often.
  • Add in the remaining powdered sugar, salt, and vanilla. Mix on low until combined.
  • Add in the milk and mix until smooth and fluffy, scraping down the sides as needed.
  • Add in the green food coloring, starting with just a small amount and adding more as needed to reach your desired shade of green. Mix until the color is fully incorporated.

To assemble:

  • Transfer the frosting to a piping bag fitted with a large star tip.
  • Once the cupcakes are completely cooled, pipe a large mound of green frosting over each cupcake.
  • Immediately decorate with Easter sprinkles and press a Peeps marshmallow bunny into the center of each cupcake.
