Ingredients

For the cupcakes:

  • 1 cup sugar
  • 1 cup all-purpose flour
  • ½ cup cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup milk
  • ½ cup vegetable oil

For the frosting:

  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 3 tablespoons milk
  • green food coloring to desired shade

To decorate:

  • Easter sprinkles
  • 20-24 Peeps marshmallow bunnies one per cupcake

Instructions

For the cupcakes:

  • Preheat the oven to 350°F. Line two standard muffin tins with cupcake liners and set aside.
  • In the bowl of a stand mixer, combine the sugar, flour, cocoa powder, baking powder, baking soda, and salt. Whisk to combine.
  • Add in the vanilla, eggs, milk, and oil. Mix on low until combined, scraping down the sides of the bowl often.
  • Using a measuring cup or ice cream scoop, divide the batter evenly into the prepared cupcake tins, filling each about ⅔ full.
  • Bake in the preheated oven for 14–16 minutes, or until the center is set and a toothpick inserted comes out clean. Allow to cool completely on a wire rack before decorating.

For the frosting:

  • In the bowl of a stand mixer, combine the softened butter and about half of the powdered sugar.
  • Mix on low until combined, scraping down the sides of the bowl often.
  • Add in the remaining powdered sugar, salt, and vanilla. Mix on low until combined.
  • Add in the milk and mix until smooth and fluffy, scraping down the sides as needed.
  • Add in the green food coloring, starting with just a small amount and adding more as needed to reach your desired shade of green. Mix until the color is fully incorporated.

To assemble:

  • Transfer the frosting to a piping bag fitted with a large star tip.
  • Once the cupcakes are completely cooled, pipe a large mound of green frosting over each cupcake.
  • Immediately decorate with Easter sprinkles and press a Peeps marshmallow bunny into the center of each cupcake.

Notes

Store cupcakes in an airtight container in the refrigerator for up to 3 days. For best results, allow cupcakes to cool completely before frosting. Start with a small amount of green food coloring and add more gradually to reach your desired shade. A large star piping tip gives the best grass-like frosting effect.
