3large chicken breasts
2Tolive oil
3tminced garlic cloves
1tsalt
½tblack pepper
¼tcayenne pepper
Fresh parsleychopped to serve

Directions:
Preheat the oven to broil. Line a baking sheet with foil or parchment and spray with non-stick spray. Set aside.
Pat dry the chicken and butterfly open.
Use a pastry brush to cover each chicken with a layer of olive oil.
In a small bowl, combine the minced garlic, cayenne pepper, black pepper and salt.
Rub the spices into the chicken breasts.
Cook in the preheated oven for 10 minutes.
Remove from the oven and flip. Return to the oven and cook for an additional 10 minutes.
Remove from the oven and flip again. Return to the oven and cook for another 5 minutes.
Remove from the oven and check for doneness. If needed return to the oven and cook for an additional 5 minutes at a time until done.
Allow to cool slightly and serve with fresh parsley and dill, if desired.
