  • 3 large chicken breasts
  • 2 T olive oil
  • 3 t minced garlic cloves
  • 1 t salt
  • ½ t black pepper
  • ¼ t cayenne pepper
  • Fresh parsley chopped to serve
  • Fresh dill chopped to serve

Instructions

Directions:

  • Preheat the oven to broil. Line a baking sheet with foil or parchment and spray with non-stick spray. Set aside.
  • Pat dry the chicken and butterfly open.
  • Use a pastry brush to cover each chicken with a layer of olive oil.
  • In a small bowl, combine the minced garlic, cayenne pepper, black pepper and salt.
  • Rub the spices into the chicken breasts.
  • Cook in the preheated oven for 10 minutes.
  • Remove from the oven and flip. Return to the oven and cook for an additional 10 minutes.
  • Remove from the oven and flip again. Return to the oven and cook for another 5 minutes.
  • Remove from the oven and check for doneness. If needed return to the oven and cook for an additional 5 minutes at a time until done.
  • Allow to cool slightly and serve with fresh parsley and dill, if desired.

Notes

Storage: Chicken can be stored in the fridge in an airtight container for up to 2 days.
